Another squash soup recipe

    Awhile back, I posted a Zucchini Soup recipe. This one is Golden Squash Soup, which we had last night, and it's delicious!
    5 medium leeks, white part only (I used 1/2 med. onion)
    2 T. butter
    4 c. cooked butternut squash
    4 c. chicken broth (I used turkey)
    1/4 t. dried thyme
    1/4 t. pepper
    1 1/2 c. shredded cheddar cheese
    1/4 c. sour cream
    chopped green onion for garnish
    Cook leeks or onions in butter in large pot. Add cooked, mashed squash and chicken broth. Bring to a gentle boil, then add seasonings. Reduce heat to low and add cheese. Stir until soup is heated through and cheese is melted. Garnish with the sour cream and chopped green onion.

    I'm a real soup fan and love to throw this and that into the soup pot and come up with something wonderful. I used to dream about opening a restaurant only for lunch serving soups and sandwiches of the day.

    By the way......roasting veggies in the oven first until slightly browned gives a wonderful flavor to soups. A blender is also a necessary item.
