Daisys coconut muffin recipe?

    I'm not sure which recipe I put here.

    One I'm really happy with is based on the Almond joy bar. I mix 6 eggs, keeping 3 whites out, with 1/2 cup coconut oil (very soft or melted), almond extract, sweetener equivalent to a cup of sugar (I use a little less of xylitol or erythitol).

    In another bowl, I mix 1 cup of coconut flour (can use 1/2 almond meal), 2 T. cocoa powder, 1 t. each baking soda and salt, and 1 cup of slivered almonds. Then I mix the egg mix into this dry mix, to make the basic batter.

    Then I whip the 3 egg whites. I mix and fold into it: soft mascarpone cheese (1 tub), and 1 cup shredded coconut.

    I grease 12 cupcake holders with coconut oil. I put the batter in thin on the bottom and sides, and then put a nice amount of the egg white mix in the hollow. Then I try to fully cover the top and sides down to the batter to fully enclose the filling.

    I bake them at 350 for 12+ minutes. It's a guilt free treat! Every ingredient is healthy, as long as there are no allergies!
