Gluten free coconut pie crust

    Here's another:

    Grease a 9" pie plate. Combine 1 1/2 c. shredded coconut, 2 T. soft butter, 1 T. rice flour, 1 t. vanilla and a dash of salt. Press into plate and bake @ 325 degrees for 10-15 minutes.

    Do they have Trader Joe's stores where you live? Trader Joe's is in 9 state; or 22 states, depending on which web site you read.

    Anyway they were a convenience store that got modified over the years and now sell a lot of imported food, organic and gourmet items.

    The current "Fearless Flyer" list the following gluten-free items: peanut butter cookie dough; frozen pancakes you microwave; and brownie mix.

    That coconut pie crust sounds delicious.
