    Good morning! I hope you are doing well on your gluten-free diet...
    Question about Amantidine- did your sister ever participate in a study using amantidine? I was looking it up and saw that a woman in the south had great improvement from Amantidine. Probably not your sister...
    Here's a recipe for chocolate cake:
    Gluten-free Chocolate Cake
    1 1/4 c. brown or white rice flour
    1/3 c. tapioca flour
    1/3 c. potato flour
    1/3 c. cocoa powder
    2 3/4 t. guar gum
    3 t. baking powder
    1/2 t. salt
    2 T. oil
    2 extra lg. eggs or 1/2 c. egg substitute
    3/4 c. honey
    1/2 c. water
    Stir together dry ingredients. Mix wet ingredients and add to dry mixture, stirring only until combined. Bake in a 8" square pan, oiled first. Bake at 350 degrees for 35-45 minutes, or until done.

    One more for the road:
    Gluten-free Rice Potato Bread
    2 1/2 t. dry yeast
    1/3 c. tapioca flour
    1/3 c. potato flour
    2 c. brown or white rice flour
    4 t. guar gum
    1/8 t. vitamin C crystals (opt)
    1 t. salt
    3 lg. eggs or 3/4 c. egg substitute
    2 T. oil
    1/4 c. apple juice concentrate, thawed
    1/2 c. + 1 T. water
    In large bowl, stir together dry ingredients. Warm the water to 110 degrees (a bit more than lukewarm). Add liquid ingredients and mix with mixer for 2 or 3 minutes. Cover the bowl and let rise for 1 hour. Beat the dough again for 2 minutes at medium speed. Oil a 9" X 5" loaf pan and dust with rice flour. Put the dough in the pan and allow it to rise in a warm place until it doubles, about 25 - 35 minutes. Preheat the oven to 375 degrees. Bake for 30- 45 minutes.

    Gluten-free Banana Spice Cake
    2 1/2 c. brown rice flour
    1/2 c. tapioca flour
    1/2 c. date sugar (use what sugar you have)
    3 t. baking powder
    1 1/2 t. cinnamon
    1/4 t. cloves
    1/4 t. allspice
    1/4 c. oil
    2 1/4 c. mashed bananas
    1/2 t. vanilla
    Mix and bake like chocolate cake recipe.

    p.s. I'm glad to hear your son is doing better all around- with your sister as payee and your home cooking. My, oh my- homemade spaghetti noodles! I'm impressed! My son's first day on the job is today- say a quick prayer for him, would you? Thanks, Terri

    Me again- the first day on the job was a piece of cake (gluten-free, of course!). He only had to sit and watch training videos. So thanks for your prayers...he was pretty cheerful! Terri
