    Rhubarb Crisp

    6C. chopped rhubarb
    6T. flour
    2C. white sugar

    Mix above ingredients in a 9x13 pan.

    1 1/2C. flour
    1C. brown sugar
    1/2C. crisco (i think i would try butter, but that just me)
    1/2C. margarine
    1C. oatmeal

    Mix ingredients except oatmeal, until crumbly.
    Add oatmeal and sprinkle mixture on rhubarb.
    Bake 45-60 min. until golden brown in 350 oven.

    Goodluck! Top with vanilla ice cream when warm, yum!

    I bet you could alway add some strawberries if you needed to get up to 6 cups.

    Or Cut the recipe in 1/2 and use a smaller pan, a 9x13 is a large pan.

    One other thing, if you use frozen rhubarb, you may have to cook it longer, she used frozen for mine and it was still abit soft and not brown on top, so we baked it a bit longer about 20 to 30 min. Just kept checking on it.
