Gluten-free chocolate cake 1 1/4 c. brown or white rice flour 1/3 c. tapioca flour 1/3 c. potato flour 1/3 c. cocoa 2 3/4 t. guar gum 2 1/2 t. baking powder 1/2 t. baking soda 1/4 t. salt 2 T. oil 2 large eggs or 1/2 c. egg substitute 2/3 c. honey (or try same amount or less of sugar) 1/2 c. water Can be made on quick bread cycle of bread machine. If doing the old fashioned way, mix dry ingredients in a large bowl. Mix wet ingredients in another bowl and combine well. Bake @ 350 for 40 minutes (check for doneness). Use a greased and floured 9 x 13 cake pan.
