More glutenfree recipes

    Gluten-free chocolate cake
    1 1/4 c. brown or white rice flour
    1/3 c. tapioca flour
    1/3 c. potato flour
    1/3 c. cocoa
    2 3/4 t. guar gum
    2 1/2 t. baking powder
    1/2 t. baking soda
    1/4 t. salt
    2 T. oil
    2 large eggs or 1/2 c. egg substitute
    2/3 c. honey (or try same amount or less of sugar)
    1/2 c. water

    Can be made on quick bread cycle of bread machine. If doing the old fashioned way, mix dry ingredients in a large bowl. Mix wet ingredients in another bowl and combine well. Bake @ 350 for 40 minutes (check for doneness). Use a greased and floured 9 x 13 cake pan.

    Here's another:
    Gluten-free banana spice cake
    2 1/4 c. brown rice flour
    1/2 c. tapioca flour
    1/2 c. date sugar (or regular sugar)
    3 t. baking powder
    1 1/2 t. cinnamon
    1/4 t. cloves
    1/4 t. allspice
    1/4 c. oil
    2 1/4 c. mashed banana
    1/2 t. vanilla

    Mix dry ingredients in a large bowl. Mix oil, banana and vanilla in separate bowl. Add wet ingredients gradually to dry, mixing well. Bake @ 350 for 30-40 minutes in a greased and floured 9 x 13 cake pan.
