This is the best bar cookie I know of. I make these every year for my children who look forward to them at Christmas time. I just made a batch today and thought you all might also enjoy them. They melt in your mouth. Nanaimo Bars Place in a double boiler and stir until creamy- then add the egg and cook for 5 minutes. 1 t vanilla 1/2 c. butter 1/2 c. sugar 5 t. cocoa or 2 sq. semi-sweet choc. 1 egg Add to cobbled mixture: 1 c. coconut 2/3 c. chopped pecans 2 c. graham cracker crumbs Press into a cookie sheet with 1" edge or a 13X9 pan (I like them small because they are very rich so I use the cookie sheet size) It's easy to put plastic wrap on the mixture then roll out or press to edges. put pan into the refrigerator to cool. Next layer: cream 1/2 c butter w/2T milk 2T vanilla instant pudding mix and 2 c. owdered sugar. spread on cooled crumb mixture put pan into the refrigerator to cool. top layer: melt 12 oz. choc. chips with 1 T butter spread on top of cooled custard layer. cool, cut into squares, keep in refrig.
