Nanaimo Bars Recipe...enjoy!

    This is the best bar cookie I know of. I make these every year for my children who look forward to them at Christmas time. I just made a batch today and thought you all might also enjoy them. They melt in your mouth.

    Nanaimo Bars

    Place in a double boiler and stir until creamy- then add the egg and cook for 5 minutes.
    1 t vanilla
    1/2 c. butter
    1/2 c. sugar
    5 t. cocoa or 2 sq. semi-sweet choc.

    1 egg

    Add to cobbled mixture:
    1 c. coconut
    2/3 c. chopped pecans
    2 c. graham cracker crumbs

    Press into a cookie sheet with 1" edge or a 13X9 pan
    (I like them small because they are very rich so I use
    the cookie sheet size) It's easy to put plastic wrap on
    the mixture then roll out or press to edges.
    put pan into the refrigerator to cool.

    Next layer:
    cream 1/2 c butter w/2T milk
    2T vanilla instant pudding mix
    and 2 c. owdered sugar.
    spread on cooled crumb mixture
    put pan into the refrigerator to cool.

    top layer:
    melt 12 oz. choc. chips with 1 T butter

    spread on top of cooled custard layer.

    cool, cut into squares, keep in refrig.

    Thanks for the recipe for Nanimo Bars....I had been looking for this and couldn't find one.
