OT, Please, a recipe for a rice cream desert

    Help, I need a recipe for a rice, cream, marshmallow and fruit desert. Anyone? It will save my day. Love Denamay

    INGREDIENTS:
    1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
    1 cup plain yogurt
    1/2 cup lime juice
    2 teaspoons grated lime rind
    1 (20 ounce) can pineapple tidbits or chunks, drained
    1 (11 ounce) can mandarin orange slices, drained (reserve several for garnish, if desired)
    1 cup white miniature marshmallows
    1 (3.5 ounce) can flaked coconut
    1/2 cup chopped pecans

    DIRECTIONS:
    In large bowl, combine EAGLE BRAND®, yogurt, lime juice, and rind; mix well. Stir in remaining ingredients. Chill 2 to 3 hours to blend flavors. If desired, serve on lettuce leaves and garnish with reserved orange slices. Refrigerate any leftovers.

    Acini de Pepe Salad
    1 c. tiny macaroni (acini di pepe)
    4 c. boiling water
    1 t. salt
    16 oz. can pineapple tidbits
    2 cans mandarin oranges
    1 c. sugar
    3 T. flour
    3 eggs
    1 c. miniature marshmallows
    9 oz. Cool Whip
    Boil macaroni in salted water for 15-20 min. Drain. Drain juice from pineapple and oranges into a saucepan. Add sugar, flour, and eggs and cook over med. heat until thickened. Cool. Mix macaroni, pineapple, oranges, and thickening together; refrigerate overnight. Before serving, add marshmallows and frozen whipped topping; mix well. This makes a big salad.

    Now, that looks like a great salad! I went to a pot luck dinner last evening, I needed a desert that I did not need to bake,{oven out of order} I improvised, using some of your ingredients. Anyway, I will use your salad recipe the next time I want to impress my friends. Love Denamay
