    My son loves to cook and also experiment. Everyone loved the cabbage casserole AKA "lazy mans cabbage rolls "that I posted. So I decided to include this recipe. By the way I did try adding rice to the Lazy Mans Cabbage rolls and it was great. I guess we could also call my cabbage casserole, "unstuffed cabbage rolls" LOL but true....


    “With my wife having had dental work done earlier, using what I had on hand, and wanting something quick. I came up with this soup.”

    1 ½ lb. Hamburger
    2 Red peppers, diced
    2 Yellow peppers, diced (or any color will work)
    1 medium onion, diced
    28 oz. Can Tomato Puree (or use tomato sauce)
    1 Cup instant Rice
    3-4 Cloves Garlic, chopped (I used roasted garlic)
    ½ Pint heavy cream
    1 Tb. Salt (I used kosher)
    1 Tb. Pepper
    1 Tb. Seasoning Salt
    1/8 tsp. Thyme

    Brown hamburger with the seasonings, lower heat to medium then add diced peppers and let simmer until peppers are almost tender. Add cream and stir, add puree or sauce with half of a 28 oz. can of water and stir. Turn off heat and add the rice, place lid on pot and let stand for about 5 minutes until rice is cooked. Serve.
    You can adjust seasonings to your taste....

    I've just discovered thyme, and it is lovely in soups. I was too stuck to my Italian seasoning, so this gives a different flavor. Thanks for sharing the recipe!
